Envínate 'Benje' Blanco Tenerife, 2024 Liquor We would pair it with100% Listn Blanco from a few old vine parcels in Tenerife. The vines grow untrained, the soils are worked by hand, and absolutely no chemicals are used. A portion of the wine macerates with its skins, and another portion under flor, a thin film of yeast that seals the wine from oxidation, contributing a lot of flavor and structure. Bottled with minimal sulfur. Pair it with a pan fried skate wing, with brown butter and capers.
